Enjoy Farmers Pantry beef mince with fresh flavours this summer.
Ingredients:
For the Beef Mince Filling:
500g beef mince
1 large onion, finely chopped
2 cloves garlic, minced
1 tbsp olive oil
1 tbsp tomato purée
1 tsp ground cumin
1 tsp smoked paprika
1 tsp ground coriander
1/2 tsp chili powder (adjust to taste)
Salt and pepper to taste
100ml beef stock
For the Fresh Salsa:
200g cherry tomatoes, quartered
1/2 red onion, finely chopped
1 red chili, finely chopped (optional)
Handful of fresh coriander, chopped
Juice of 1 lime
Salt to taste
For the Tacos:
8 small taco shells or tortillas
1 ripe avocado, sliced
100g shredded lettuce
100g grated cheddar cheese
Sour cream (optional)
Instructions:
Prepare the Beef Mince Filling:
Heat the olive oil in a large pan over medium heat.
Add the finely chopped onion and cook until softened (about 5 minutes).
Stir in the minced garlic and cook for another minute.
Increase the heat to medium-high and add the beef mince, cooking until browned (about 5-7 minutes). Break up any large chunks with a wooden spoon.
Stir in the tomato purée, ground cumin, smoked paprika, ground coriander, and chili powder. Cook for another 2 minutes.
Pour in the beef stock, reduce the heat to low, and simmer for 10-15 minutes until the liquid has reduced. Season with salt and pepper to taste.
Prepare the Fresh Salsa:
In a bowl, combine the quartered cherry tomatoes, finely chopped red onion, chopped red chili (if using), and chopped fresh coriander.
Squeeze the lime juice over the mixture and season with salt to taste. Mix well and set aside.
Assemble the Tacos:
Warm the taco shells or tortillas according to the package instructions.
Spoon the beef mince mixture into each taco shell.
Top with shredded lettuce, grated cheddar cheese, and sliced avocado.
Add a spoonful of the fresh salsa on top.
Add a dollop of sour cream if desired.
Serve:
Serve the tacos immediately, garnished with extra lime wedges and fresh coriander if desired.
