Beef Mince Tacos with Fresh Salsa and Avocado

Enjoy Farmers Pantry beef mince with fresh flavours this summer.

Ingredients:

For the Beef Mince Filling:

  • 500g beef mince

  • 1 large onion, finely chopped

  • 2 cloves garlic, minced

  • 1 tbsp olive oil

  • 1 tbsp tomato purée

  • 1 tsp ground cumin

  • 1 tsp smoked paprika

  • 1 tsp ground coriander

  • 1/2 tsp chili powder (adjust to taste)

  • Salt and pepper to taste

  • 100ml beef stock

For the Fresh Salsa:

  • 200g cherry tomatoes, quartered

  • 1/2 red onion, finely chopped

  • 1 red chili, finely chopped (optional)

  • Handful of fresh coriander, chopped

  • Juice of 1 lime

  • Salt to taste

For the Tacos:

  • 8 small taco shells or tortillas

  • 1 ripe avocado, sliced

  • 100g shredded lettuce

  • 100g grated cheddar cheese

  • Sour cream (optional)


Instructions:

  1. Prepare the Beef Mince Filling:

  • Heat the olive oil in a large pan over medium heat.

  • Add the finely chopped onion and cook until softened (about 5 minutes).

  • Stir in the minced garlic and cook for another minute.

  • Increase the heat to medium-high and add the beef mince, cooking until browned (about 5-7 minutes). Break up any large chunks with a wooden spoon.

  • Stir in the tomato purée, ground cumin, smoked paprika, ground coriander, and chili powder. Cook for another 2 minutes.

  • Pour in the beef stock, reduce the heat to low, and simmer for 10-15 minutes until the liquid has reduced. Season with salt and pepper to taste.

  1. Prepare the Fresh Salsa:

  • In a bowl, combine the quartered cherry tomatoes, finely chopped red onion, chopped red chili (if using), and chopped fresh coriander.

  • Squeeze the lime juice over the mixture and season with salt to taste. Mix well and set aside.

  1. Assemble the Tacos:

  • Warm the taco shells or tortillas according to the package instructions.

  • Spoon the beef mince mixture into each taco shell.

  • Top with shredded lettuce, grated cheddar cheese, and sliced avocado.

  • Add a spoonful of the fresh salsa on top.

  • Add a dollop of sour cream if desired.

  1. Serve:

  • Serve the tacos immediately, garnished with extra lime wedges and fresh coriander if desired.
