🍋 Souvlaki with Toasted Pitta, Salad, Houmous or Tzaziki and Homemade Chips

Ingredients:


For the Pork Skewers:

- 500g Farmers Pantry pork chops or tenderloin, chopped into bite-sized pieces

- 60ml olive oil

- Juice of 2 lemons

- 1 tbsp dried oregano

- 1 tsp salt

- 1/2 tsp black pepper


For the Homemade Chips:

- 4 large potatoes, cut into thick chips

- 2 tbsp olive oil

- Salt and pepper to taste

- Optional: Paprika or your favorite seasoning


For Serving:

- 4 Pitta bread

- Fresh salad (lettuce, tomatoes, cucumbers, red onions)

- Houmous or tzatziki


Instructions:


1. Prepare the Pork:

- Visit Farmers Pantry Butchers and ask them to chop your pork chops or pork of your choice into bite-sized pieces.


2. Make the Marinade:

- In a large bowl, combine 60ml olive oil, juice of 2 lemons, 1 tbsp dried oregano, 1 tsp salt, and 1/2 tsp black pepper.


3. Marinate the Pork:

- Add the pork pieces to the bowl and toss to coat evenly. Cover and refrigerate for at least 1 hour, or overnight for more intense flavor.


4. Prepare the Skewers:

- If using wooden skewers, soak them in water for 30 minutes to prevent burning. Thread the marinated pork pieces onto the skewers.


5. Grill or BBQ:

- Preheat your grill or BBQ to medium-high heat. Grill the skewers for 8-10 minutes, turning occasionally, until the pork is cooked through and has a nice char.


6. Prepare the Homemade Chips:

- Preheat your oven to 220°C.

- Toss the potato chips in 2 tbsp olive oil, salt, pepper, and any additional seasonings.

- Spread the chips on a baking sheet in a single layer.

- Bake for 25-30 minutes, turning occasionally, until golden and crispy.


7. Serve:

- Toast pitta bread on the grill or in a toaster until warm and slightly crispy.

- Serve the pork skewers in the toasted pitta with fresh salad, and a generous dollop of hummus or tzatziki.

- Pair with homemade chips for a complete and delicious meal.
